  • PhilosophyThis great classic, a quintessential Premier Cru from Volnay’s climat Les Santenots, illustrates the role terroir plays in Burgundy. Identified as early as the 13th century (first mentioned in 1218) by the monks at the Tart and Cîteaux abbeys for its unique character, and carefully handled by winegrowers who vinified its grapes separately, this appellation built up its reputation and its distinctiveness little by little over time. Les Santenots yields fine, elegant wines that are ideally suited for laying down.
  • TerroirHailing from Les Plures, the particularity of this Volnay Premier Cru is that it is actually in the commune of Meursault. The red wines are classified as Volnay Premier Cru Les Santenots, whereas the whites are Meursault Premier Cru Les Santenots. Located at the edge of the com- mune of Volnay, halfway up the slope, the shallow soil found in this plot lends finesse and elegance to the wines, while the red clay soils give power and depth.
  • Vinification and ageingVolnay was the first village to be harvested in 2020. The grapes were meticulously sorted and entirely destemmed. Fermentation took place in wooden vats and began naturally under the influence of indigenous yeasts. Very few punch-downs were needed for this particularly rich vintage. The young wine was then transferred to barrels (33% lightly toasted fine- grained new oak from central France’s forests) and aged for 17 months.
  • Tasting notesGorgeous colour with bluish nuances. The pure, clean nose offers aromas of spices and forest undergrowth along with a touch of orange peel, baked goods and hot stones. Magnificent rich, deep start to the palate. Flavours of fresh raspberries are complemented by dark chocolate and cocoa, along with a touch of spicy herbs (eucalyptus, menthol) and balsamic notes (oak, cedar). The palate is very rich and complex and boasts lovely freshness and peppery tannins. This is a superb wine for laying down.
