  • Philosophy We are happy to be able to illustrate the role terroir plays in Burgundy, at the heart of one of the most prestigious villages renowned for its great white wines, with our two Chassagne-Montrachet Premier Cru cuvées whose personalities, which are so well-defined yet so different, are the reflection of the unique terroirs they hail from.
  • Terroir Production of Les Baudines is relatively limited. This Premier Cru vineyard is one of the highest in altitude. It is located at the southern extremity of the village, bordering the village of Santenay, just above Les Morgeot. Enjoying southeastern exposure, the vines grow in soil that contains limestone marls. This climat is reputed for the freshness and minerality it lends to the wines.
  • Vinification and ageingFollowing extremely gentle pressing of the grapes and settling to clarify the juices, vinification was entirely conducted in barrels at low tempe- ratures to promote the development of fresh, mineral aromas. During ageing, gentle, regular stirring was performed to lend the wine even further roundness and richness. Barrel ageing lasted 16 months with a proportion of 33% new oak from the forests of Upper Burgundy to impart elegant oakiness to the wine.
  • Tasting notes BBeautiful golden yellow colour. The first nose is reminiscent of hazelnut and buttercream. Then comes a pleasing f loral bouquet redolent of white blossoms and marigolds with hints of lemongrass. Magnificent, very fresh start to the palate, featuring f lavours of lemon verbena and candied lemon peel. Pleasing acidity and nice salinity, with nuances of f lint and gunflint. A touch of frangipane lends body. This is a very well-balanced wine that is fresh, long and velvety on the palate, boasting excellent cellaring potential
