  • PhilosophyWorthy of a Grand Cru! If there were one single word to define the Aux Combottes Premier Cru, it would be "plenitude". Indeed, its location makes it, in our opinion, one of the finest Premier Crus in Gevrey-Chambertin, if not the finest. Aux Combottes are rich, balanced wines featuring remarkable depth that deserve to be classified as Grand Crus.
  • TerroirNiched between its illustrious neighbours - Latricières-Chambertin Grand Cru to the north and Clos-de-la-Roche Grand Cru to the south - Aux Combottes is an exception as it is the only Premier Cru in the long, uninterrupted stretch of Grand Crus that links Gevrey with Morey. This anomaly, which is probably due to an old rivalry between the villages, allows wine lovers to take advantage of enjoying a magnificent Premier Cru that boasts all of the qualities of a Grand Cru!
  • Vinification and ageingThe grapes were handpicked and meticulously sorted so as to only keep grapes of the highest quality. The bunches of grapes were destemmed and transferred to tanks. Vinification relied on indigenous yeasts and lasted 20 days, with daily punch-downs to develop the wine’s colour and tannins. The cuvée was barrel-aged for 18 months: the first 6 months in a oneyearold cask followed by another 12 months in a "semi-new" cask that had been previously used for the ageing of a red Bourgogne for 3 to 6 months. The barrels are selected for the quality of their grain, extra fine from the center of France.
  • Tasting notesGorgeous deep red, almost black in colour. The first nose is fresh and powerful, evocative of spices (paprika), fruit and flowers. It then opens up to fruity scents (blue and red fruit, cherry, Morello cherry, vineyard peach and blood orange), spices (clove, pepper) and notes of wood (lightcoloured wood, cedar, cherry bark). Generous start to the palate, which is very dense and concentrated with elegant tannins hinting at liquorice and spices. Robust, velvety finish with a touch of vanilla and custard tart. Superb cellaring potential.
