Philosophy The Bourgogne Côte d’Or appellation is a new appellation beginning with the 2017 vintage. It aims to offer the nobility of Burgundy’s regional appellations by using grapes that come exclusively from the finest terroirs in the Côte de Beaune and the Côte de Nuits, a philosophy the House of Edouard Delaunay fully supports.
Terroir The selected Chardonnay grapes for our cuvée originate in the Côte de Beaune (principally Auxey-Duresses and young vines in Meursault). The plots are managed so as to obtain ripe, flavourful grapes. Their concentration is augmented by the plots’ south-southeastern exposure.
Vinfication and ageing The grapes were handpicked, sorted and pressed immediately. The must was allowed to settle in the vats before undergoing vinification in oak barrels (15% new oak) at low temperatures for 1 to 3 months. The wine was then aged for approximately 12 months, with frequent stirring when and where needed. Such a vinification process is worthy of a great Burgundy white wine.
Tasting notesBeautiful lemon yellow in colour. The first nose is floral (white spring blossoms such as narcissus, wild lily, lily of the valley) followed by scents of baked goods (candied chestnut, pear tart, vanilla) and herbal infusions (linden, lemon verbena). The palate starts off rich, and features flavours of barley sugar, candied lemon, and mandarin with a boost of herbs and spices (coriander) along with toasted hazelnut. The finish boasts a touch of minerality (flint). This wine’s full-bodied, mature profile will be further enhanced after a year or two in the cellar.
